Just Because You Can...Doesn't Mean You Should

According to the Joy of Cooking, you can microwave beets. I was running late for a BBQ on Sunday, and was planning to make a beet salad to bring. I didn't have an hour to roast 'em in the oven, so just this once I thought I'd try the microwave. Well. Not only do you end up with a disatrous mess, you also create wobbly, soft, tasteless beets. Now I know.

Next time you are short on time, try Melissa's beets at Trader Joes. They taste great- and no mess.

I love beets and I have cooked on a lot of ways. Here is a real easy one. You can use your cheese grater if you wish but the best is if you cook them wrap on aluminum foil on the oven and after they are done just add a teaspoon of butter, the flavor of the beet is still there and no mess at all.

OH DEAR! Just last night I diced beet really small and cooked in salted water in a skillet (so lots of surface area) ... took maybe 20 minutes. Next time! Glad you were taking a beet salad though! BTW I'm wondering if it's a power issue, microwaves DO vary, specific information like "5 minutes at 50% power" doesn't cut it unless you've got the same wattage.
